Ingredients
  

  • 1 cup plain pumpkin puree unsweetened
  • 2 cups rolled oats
  • 1/2 cup natural peanut butter no xylitol
  • 1/4 cup plain yogurt unsweetened
  • 1/2 teaspoon cinnamon optional
  • 1 tablespoon honey optional

Method
 

  1. In a mixing bowl, combine the *pumpkin puree*, *peanut butter*, *yogurt*, and *honey* (if using) until smooth and well mixed.
  2. Gradually add the *rolled oats* to the mixture, stirring continuously until the oats are fully incorporated and the mixture is thick.
  3. If using, sprinkle in the *cinnamon* and mix well to combine.
  4. Line a baking sheet with *parchment paper*. Using your hands, scoop out small amounts of the mixture and form them into bite-sized balls or flatten them into cookie shapes on the baking sheet.
  5. Once all the mixture is shaped, place the baking sheet in the refrigerator for about 30-60 minutes to allow the treats to firm up.
  6. After chilling, remove the treats from the refrigerator and store them in an airtight container.
