Ingredients

  • 1 cup sourdough starter unfed
  • 1/2 cup whole wheat flour
  • 1/2 cup oat flour
  • 1/4 cup plain pumpkin puree
  • 1 large egg
  • 1 tablespoon olive oil
  • 1/2 teaspoon cinnamon optional

Equipment

  • 1 Mixing bowl
  • 1 Baking sheet
  • 1 Parchment paper
  • 1 Rolling Pin
  • 1 Cookie cutters
  • 1 Spatula

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the sourdough starter, whole wheat flour, oat flour, pumpkin puree, egg, and olive oil.
  3. Use a spatula to mix the ingredients until a dough forms. If the dough is too sticky, gradually add a bit more flour until manageable.
  4. Lightly flour your work surface and roll out the dough to about 1/4 inch thick.
  5. Use cookie cutters to cut the dough into fun shapes and place them on the prepared baking sheet.
  6. If using, sprinkle a little cinnamon on top of some of the treats for added flavor.
  7. Bake the treats in the preheated oven for 20-25 minutes or until they are golden and firm to the touch.
  8. Once baked, remove the treats from the oven and let them cool completely on a wire rack.
