Method
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the whole wheat flour, rolled oats, and cinnamon. Mix well to ensure the dry ingredients are evenly distributed.
- In another bowl, whisk together the applesauce, honey, plain yogurt, and egg until smooth and well combined.
- Gradually pour the wet mixture into the dry mixture, stirring until a dough begins to form. If the dough is too dry, add water a tablespoon at a time.
- Knead the dough with your hands until it is smooth and no longer sticky.
- On a floured surface, roll out the dough to about 1/4-inch thickness using a rolling pin.
- Use cookie cutters to cut out shapes from the rolled dough and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes or until the cookies are lightly golden and firm to the touch.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Storage & Reheating:
Store the cooled cookies in an airtight container for up to 2 weeks at room temperature. For longer storage, keep them in the refrigerator for up to a month. Remember, these are occasional treats, not a complete diet, so offer them in moderation. Variations:
- Substitute honey with maple syrup for a different flavor.
- Add 1/4 cup of pumpkin puree for a seasonal twist.
- Mix in 1/4 cup of unsweetened shredded coconut for added texture.
- Use sweet potato puree instead of applesauce for a unique taste.
